Simple Ayurvedic Breakfast Porridge

Once people start learning about Ayurveda, the question of what to eat for breakfast always comes up. Because this meal occurs during the kapha time of time (between 6 and 10 am) we recommend something relatively warm, light and well-spiced.

Ingredients

1⁄2 cup buckwheat groats (or other favorite grain)

1 cup of water

1⁄2 cup fresh or dried fruit — apple, pear, berries, raisins

1 cardamom pod

1⁄4 tsp cinnamon

- honey, maple syrup or coconut sugar to taste

1⁄2 - 1 tsp ghee or coconut oil

- a pinch of salt

- a squeeze of lemon or lime juice

Optional for garnish: dollop of yogurt, ground flax, pepitas or coconut flakes.

Advanced Prep

Soak buckwheat in water overnight (or for a few hours).

Method

  1. Strain and rinse buckwheat.

  2. Combine buckwheat, cardamom pod, cinnamon, and chopped fruit in a small saucepan. Cover with water.

  3. Bring to a boil. Then, cover and simmer until tender (up to 20 minutes).

  4. When porridge is ready to serve, top with honey (or other sweetener), ghee, a pinch of salt, squeeze of lemon/lime juice, and any other garnish of your choosing.

Note:

This recipe could also be made with oats, quinoa, amaranth, rye flakes, whole rye berries or another grain of your choosing. Cook time will vary slightly.
