Once people start learning about Ayurveda, the question of what to eat for breakfast always comes up. Because this meal occurs during the kapha time of time (between 6 and 10 am) we recommend something relatively warm, light and well-spiced.
Ingredients
1⁄2 cup buckwheat groats (or other favorite grain)
1 cup of water
1⁄2 cup fresh or dried fruit — apple, pear, berries, raisins
1 cardamom pod
1⁄4 tsp cinnamon
- honey, maple syrup or coconut sugar to taste
1⁄2 - 1 tsp ghee or coconut oil
- a pinch of salt
- a squeeze of lemon or lime juice
Optional for garnish: dollop of yogurt, ground flax, pepitas or coconut flakes.
Advanced Prep
Soak buckwheat in water overnight (or for a few hours).
Method
Strain and rinse buckwheat.
Combine buckwheat, cardamom pod, cinnamon, and chopped fruit in a small saucepan. Cover with water.
Bring to a boil. Then, cover and simmer until tender (up to 20 minutes).
When porridge is ready to serve, top with honey (or other sweetener), ghee, a pinch of salt, squeeze of lemon/lime juice, and any other garnish of your choosing.
Note:
This recipe could also be made with oats, quinoa, amaranth, rye flakes, whole rye berries or another grain of your choosing. Cook time will vary slightly.
